Edamame hummus is a fun and delicious alternative to traditional hummus.
Ingredients
- 2.5 cups shelled edamame
- 2 tsp sesame seeds
- ¼ cup tahini
- Lemon juice from 1 lemon
- 3 tablespoons olive oil
- ½ teaspoon salt (more, to taste)
- 2 minced cloves garlic
- 2-3 Ice
- Toppings of your choice – black and white sesame seeds, cilantro, chilli flakes, and/or olive oil
Instructions
- Grind the sesame into powder in the food processor,
- Then add the edamame, tahini, lemon juice, olive oil, salt, and garlic to the food processor and blend on high for till smooth.
- Add the ice cube 1-2 at a time, and continue to blend until the hummus is smooth and creamy
- Transfer the edamame hummus to a serving bowl and garnish with any or all of the optional toppings.
