Edamame Hummus

Edamame hummus is a fun and delicious alternative to traditional hummus.

Ingredients

  • 2.5 cups shelled edamame 
  • 2 tsp sesame seeds
  •  ¼ cup tahini
  • Lemon juice from 1 lemon
  • 3 tablespoons olive oil
  • ½ teaspoon salt (more, to taste)
  • 2 minced cloves garlic 
  • 2-3 Ice
  • Toppings of your choice – black and white sesame seeds, cilantro, chilli flakes, and/or olive oil

Instructions

  • Grind the sesame into powder in the food processor,
  • Then add the edamame, tahini, lemon juice, olive oil, salt, and garlic to the food processor and blend on high for till smooth.
  • Add the ice cube 1-2 at a time, and continue to blend until the hummus is smooth and creamy
  • Transfer the edamame hummus to a serving bowl and garnish with any or all of the optional toppings.
